Is Gluten hurting your Health?
Remember the old saying, “you are what you eat” well it is all too true, good health does depend on what you eat, and sometimes on what you don’t eat. Gluten a protein that is found in wheat, rye, and barley, and many individuals cannot tolerate the gluten protein, which is found in these foods, and it is something that they cannot easily digest. For these individuals, when the gluten works its way into their bodies, it causes many negative consequences. One of the major health concerns associated with intolerance to gluten, is celiac disease. Celiac disease affects nearly 1 in 100 people in the US, and left untreated it can be responsible for many health problems. Often the illnesses that were started by the gluten are identified, but the cause (the intolerance to gluten) is not always found. Even for those who are being tested for a gluten intolerance the diagnosis of celiac disease is often very difficult to diagnose, and easy to miss. This difficulty in diagnosing celiac disease is due to the large array of symptoms, and due to the difficulty in finding a positive sample during a biopsy. Because gluten is not always identified as the culprit those affected continue to eat gluten, giving the gluten even more opportunity to cause damage within their bodies.
